    Paad Thai (pg 131) is one of the better paad Thai recipes I had found before I found my current favorite. This recipe is quite acceptable and has the advantage of not using any hard-to-obtain ingredients. I have a number of recipe, like this, that I use when I am in a rural area rather than an urban area where I have a broader selection of ingredients. Note the reverse happens for recipes with foraged ingredients.
