    Creme fraiche scones (pg 188) is a scone using cake flour and creme fraiche to make a delicate scone. Unfortunately, I don't have a source of truly fresh cake flour to take it up to the next level. But this is a useful recipe as a benchmark for another directions the baker can take scones.
