    BARBECUED EGGPLANT AND LENTILS P.179. In this dish, breaded eggplant is cooked with aromatics, tomatoes, and seasoning, then mixed with cooked lentils. I make this each year when the garden produces eggplant. This is a really delicious combination that appeals to both vegetarians and meat eaters. Would be easy to make vegan too by substituting for the honey.

    Unfortunately this book isn't indexed, since it's a much older title, but it contains numerous good recipes including my favourite ratatouille. The vegetables are layered with seasoning sprinkled on each layer. This avoids having to cook each one separately. It's adaptable too and I often add tomatillos, chard stems, etc in small amounts. Just one of the tasty vegetarian offerings included in this book.
