      No, I didn't start with Greek yogurt; my local co-op carries labneh although in small jars. So think of this recipe as simple roasted eggplant with a labneh topping flavored with nigella and fennel seeds, mint, and chili. The flavors meld nicely with the eggplant. I'll definitely repeat this recipe.

      Want a substitute for gravlax? This recipe is exceptional but do search for true wasabi and a decent sake. Serving with crème fraîche, rye, and Blackened sweetcorn salsa makes sense I prefer to use as I would gravlax - more simply without salsa but rather lemon, cucumber, onion or shallot . . .

      I made just the salsa to go with Wasabi cured salmon. With the exception of the mint, this is a decent but unremarkable sweetcorn salsa. I liked it but would not pair with the salmon. I prefer simpler flavors so I can concentrate on enjoying the salmon and true wasabi. However, I can see it going well with a summer grill and the mint makes lamb a likely pairing.
