      This was surprisingly good! Would definitely have again! Makes quite a wet mixture with the addition of juice but you could adjust to preference.

  • Savory "Indian-style" crepes

      Doubled recipe and got 9 large crepes. Everyone loved the crepes! Kids not so keen on butterbean mash but DH and I liked it. Would also work well with mushrooms/tomatoes/potatoes etc. or even a veg curry. I used gf plain flour and this worked well.

  • Fried tofu "po' boy" baguette

      I love new ideas for vegan samdwiches. Made just the tofu component to use up a leftover half block of tofu. This was tasty! Although a little fiddly it didn't actually take too long. I got 4 fishfinger sized tofu blocks (possibly too thick) and found that 3 fit into a normal size sandwich. I ate them all, I'm not sure how this would serve 4 - 2 at a push! I guess you would have to slice more thinly. Added vegan mayonnaise and lettuce but had no radishes (or baguettes). Would definitely give this one another try!

      D'oh, you have to add water to creamed coconut to make coconut cream. Try this again!

      Note from Jan 2017: Made the quick-pickled cucumbers today and I think I have now developed an addiction. So easy and so tasty. Cucumber-hating husband rather predictably hated it.

      I'm sure I've made this before but must have forgotten to review it. We loved it (kiddos needed a lot of encouragement but did eat). I was concerned about portion sizes because it said 2-4 so I upped the potatoes to 6 and we ended up with loads, probably don't need to increase in future. Had no cream but just added a splash more milk. Added mustard to adults only. Be careful not to oversalt. We had with sausages but a pie, as suggested, would be good too. Filling.
