      This is similar to the famous Chinese Smashed Cucumbers but quicker and easier. The recipe requires a 20-minute chill in the refrigerator, which is great for putting the final touches on the rest of the dinner. I thought it might be too garlicky for my husband but the flavors of the garlic, salt, and sesame oil are nicely balanced and we both think this is SO GOOD! I will definitely make it again.

      This is fantastic and dead easy with most of the ingredients easy to find most of the time. We had with jerk chicken and it a perfect foil. I have added this to my go to salsa list.

      I made this for Christmas dinner (well actually my daughter took over and added apple) and we all loved it. I made it again for a birthday celebration with dried cranberries only and goat cheese. I made the spiced pecans from BA orange cookbook, instead of just toasting them and it really enhanced the dish. I used cooked cranberries left over from making simple syrup. The vinaigrette made it colorful and more celebratory. The photo on this site is of another dish (wild mushrooms?).
