      Excellent. Because I didn't have, and couldn't find, Palmyra nectar powder, I used 70 g of dark brown sugar (I could have used coconut sugar). I used only 1/4 teaspoon of cloves. I used sheep's milk yogurt in place of the coconut yogurt and I used refined coconut oil.

      To veganize this I used a tablespoon of soya cream in place of the egg yolk and used vegan butter. I also cheated by using a cookie scoop and flattening the dough with a wet spoon in place of rolling into the log and freezing, didn't want to wait for the cookies!!!!! They taste delish and not too herby either as I was unsure about the Rosemary, they stay crispy in the fridge and freeze well.

      I used the pastry recipe suggested earlier in the book. Despite chilling the dough, it was a bit challenging to roll out. I chose to make a single large galette which was very rustic looking by the time it was assembled. I was prepared for disaster! Luckily, this turned out to be quite delicious and I’d happily make this again. The chunks of almond and cinnamon notes were spot on. We served with a dollop of plain yogurt.

      Light and delicious! I needed almost 2 whole avocados and 1 and 1/2 chocolate coconut yogurts. Easy to make. Will make this again. About 187 calories per serving.

      These were easy to make and taste delicious. I might add a drizzle of melted chocolate over the top next time. I used 70% chocolate.
