      I was out of tortillas. And, I kept thinking about the avocado crema recipe. So, this became pizza. VERY wonderful pizza. I first schmeared the crust with the crema then topped it with the cheese and baked it at 500 while the flank steak was cooking. Then, I thinly sliced the flank steak and topped the pizza with that and the radishes and the avocado. that all got topped with more crema. Amazing!

  • Spicy shredded-chicken and chorizo tostadas (Tostadas de tinga)

      Adapted a bit. Used a tin of tomatoes instead of fresh tomatoes. I'm afraid I can't get tomatillos in north east england... I cooked the sauce out a little before adding the chicken and chorizo. Tasty, but I'll go easier on the chillies in adobo next time. Never having used it I had no idea how spicy it was. I know now. Eaten in tacos instead of tostada. Lovely change from fajitas! The poached chicken picks up a lovely flavour. I doubled it, so have tasty chicken for sandwiches.

      I wanted to save calories so did these as fish cakes in the air fryer. Had to add oodles more flour. Next time I'll lessen the amount of beer and increase both the fish and the flour. Flavor even with no salt was very good. Tartar sauce was a tad spicy for me but perfect for my hubby

      I’ve been making this chicken since 2017, it’s a hit. I’ve even done a short cut version with a rotisserie chicken and seasoned with the same ingredients.
