      These are amazing. I've made them more times than I can count. I keep them in a ziplock bag in the freezer for a quick re-heat in the microwave. This is a great use for Lily's sugar free chocolate chips.

      I don't consider myself a corn muffin person but these were surprisingly good. The last time I made them, I added frozen raspberries and lemon zest which was great with the corn.

      I've made these and enjoyed them very much. I'm only giving them three starts because they are a lot more work than most Hungry Girl baked goods recipes. I've never made them again because you get the same payoff with her wonderful muffins without the additional labor.

      I substituted pineapple for mango. Also, something that always bothers me about Hungry Girl recipes is that when she calls for coconut extract, she always specifies a tiny amount. Maybe she's using a different brand than me but if you want to taste it at all, you need to add more.

      These are pretty good if you don't mind the oat bran texture. For me, it's best to mix the dry ingredients the night before if you want to make these. Getting all the parts together first thing in the morning takes too much time when you are just cooking for yourself.

      These are the only overnight oats I can stand. All other recipes are disgusting but this is actually edible. In fact, I have a banana and may make them tonight!

      As you can probably surmise from the ingredient list which includes chia seeds and very little fat, these are super dry. Suck all the moisture out of your mouth and chew forever dry.

      This turned out great but I cheated a little. Instead of four egg whites, I used two whole eggs. I also added about a tablespoon of vegetable oil since it's an extremely low fat recipe and I wanted to soften it up a bit. In my experience, old fashioned oats benefits from a long soak to hydrate the oats before baking. I added the cherries frozen and let the whole thing sit for an hour before putting it in the oven.

      This was not bad. Nothing beats a casserole that is diet friendly. I love having the leftovers in the fridge so I can help myself without having to think about points or carbs or calories. This also has the distinction of having a much higher vegetable content than most casseroles..

      This is very good and it makes a ton of food. I cut the recipe it half and I felt like it still would have fed four people.

      This is really more of a vegetable dish with a dash of pasta. There is 10 cups of vegetables to 4.5 oz of pasta. Still pretty good and filling. Makes a ton.

  • Caramelized onion chickpea burgers

      These were delicious. They take a while because caramelizing onions takes a while. Otherwise, pretty easy and not the usual dry, suck the moisture out of your mouth, texture of most homemade veggie burgers. They do need a couple squirts of hot sauce, and I didn’t have low fat cheddar so used regular. Served on a toasted bun with mayo and green leaf lettuce. These receive the ultimate compliment: I’ll eat one for breakfast tomorrow.

      Super disappointed with these. For some reason, the artificial sweetener flavor really was pronounced.
