    Quesadillas (pg 119) like many recipes in this book is a mix-n-match recipe suggests one chooses from 7 cheese and 11 fillings and serve with the salsa (out of 4) and guacamole. I chose queso fresco, chicken frajita filling, and green tomatillo salsa. I was very pleased.
