  • Cornmeal waffles with fresh blueberry compote

      I didn’t care for these waffles. They had no taste. I topped them with lots of blueberry compote but they still weren’t great, so I poured real maple syrup on top followed by plain Greek yogurt, the latter of which really improved them. The recipe calls for one cup of blueberries but that made much too little compote for the number of waffles. I would at least double the compote.

  • Feta-quinoa cakes with spinach

      Cakes did not seem to hold together well so I ended up baking for 20 min at 350 instead of pan frying. Also did not think the mayonnaise sauce added much.
