  • Brandy butter shortbread

      This was a really useful & easy way to use up 200 g of high quality brandy butter (I rescued 1 kg in clearance from landfill & froze it). I made a double batch, in an imperfectly-sized tin. I made it healthier by substituting vegan baking block for the additional butter, & using half plain white wheatflour & half multi-grain atta. I also added 2 tsp of scappi spice blend. It smells divine & I can't wait for it to cool down so that I can eat some.

  • Slow cooked duck tacos with pineapple salsa

      This is a favourite recipe for me, it takes a bit of time but the duck shreds really well and the flavours are great. I hate tequila and didn't want to buy just for the recipe so just leave it out, add a bit of extra water and it works just fine. Another good (cheaper) similar dish is Pulled Chicken Tacos with Burnt Pineapple Salsa' on GeesSoSimple.com

  • Fennel, chilli and sausage ragù

      I found this really delicious, only small complaint from my partner is that he doesn't like the fennel that much. I thought the fennel worked really well to cut through the richness of the sausage meat.
