      Really delicious. We followed directions pretty much as written but used a jalapeno instead of serrano and cooked the fresh, crisp corn kernels only 2 or 3 minutes. Be sure to use dried Spanish chorizo. Can't wait to make this again.

      This is a delicious way to eat chard. I love that it uses both leaves and stalks. It does take a while to prepare -- at least 45 minutes start to finish (some of that is hands-off cooling time).

  • Eggplant with cashew butter and pickled peppers

      I got a bunch of fairytale eggplant at the market and was looking for something more than my usual "I guess I'll roast and use it for something" plan. This recipe definitely delivered! The sauce is ridiculously good. You may need to adjust the amount of water to get the consistency. I used vegan fish sauce which needed a little more than the recipe called for to get the right level of funk added.
