Tempura fish burger (pg 66) - Think tempura fried catfish, Asian slaw, Japanese tartar sauce (kewpie mayo, pickled ginger, soy sauce, sesame oil, wasabi paste), Japanese sesame pickles, on a potato bun ... or cheat and use a soft flour tortilla ... This is actually a great fish taco ... I ended up ignoring that it was supposed to be a burger.

Kimchi balls (pg 117) is a simple arancini with a kimchi-sriracha-Permesan-mozzarella filling. This is a brillant snack/appetizer/fingerfood. I used the local Firefly kimchi. For a large group I would be tempted to offer two or three flavors from Sinto Gourmet - yes I am that sure guests will love them.

Notes about Recipes in this book

  • Scrambled eggs with Chinese chives

This was a decent scrambled egg recipe. I didn't have any Chinese chives, so instead I just upped the amount of garlic by a clove (according to the internet, Chinese cloves taste a little garlicky). They're scrambled eggs, so they can be cooked according to creaminess. As someone who likes their eggs on the drier side, this took a little longer than expected with normal scrambled eggs. Served with a side of chili garlic sauce and jasmine rice.
