      I didn’t expect to like this recipe very much but I had in my freezer some chia seeds that had already “expanded” in water and I needed a way to use them. This recipe is pretty good! They rise very high and brown beautifully, and the texture is deliciously fluffy! I kept the leftover batter in my refrigerator overnight because I was curious about whether or not this recipe would work as a make-ahead breakfast when we have overnight company. The batter worked beautifully in my Belgian waffle maker, and the results on the pancake griddle the second day were just as good as the first day. Overall, this is an excellent, healthy recipe!

      Tonight was the first time I ever made hummus and it came out great! Not only that, it was super-easy and quick. We ate this with warm, homemade pita bread and steak salad and it was a fabulous meal!
