      These are delicious! They have a soft, cake-like texture. I used mini chocolate chips because I had some on hand, and I substituted raisins for the coconut because my husband loves raisins. I will absolutely make these again! This is recipe #21.

      The flavors of banana and orange are subtle, but combined with the ample butter in this recipe, these waffles are quite good. This makes a very thick batter. I topped my waffle with chunks of fresh orange and pineapple along with plain, unsweetened Greek yogurt, and pure maple syrup.

  • Banana pancakes

      These were good and not very sweet. I tend to have a problem with slices or chunks of banana folded into a pancake batter. The batter around the pieces of banana takes longer to cook through, and there’s nothing worse than a bite of gooey raw batter. Additionally, the batter here is very thick, so I made sure to leave the pancakes on the griddle for a long time. The nutmeg makes these different from many banana pancakes.
