    Miso & yuzu aubergine (pg 76) - I have no reliable source for fresh yuzu so I had to go with yuzu juice and skip the zest. This requires white miso, sake, soy sauce, and Dijon mustard which creates an excellent foil for the baked eggplant -- a balance of sweet, salty, and acidity.
