      So easy and surprisingly delicious. I used closer to 2 c fresh mushrooms because I had a bunch to use up, and using even more would have been ok.

      In the header, the author says her family ate this in under ten minutes. She isn't kidding; this stuff is delicious. I didn't have cream, so I used evaporated milk. I used yellow potatoes. Don't do what I did and forget to drain the potatoes, though... It was a little soupy because of my mistake, but it was still delicious! It should be renamed "crack potatoes." These are addictive.

      Will make this again, even though I found it a little bland the first time. Next time, I plan to use vegetable stock instead of water and add a bunch of garlic (and possibly some ginger? A dash of cayenne pepper?). I might also add seitan to the finished dish, and serve alongside rice or quinoa.

      This was kind of disappointing. I didn’t follow the recipe that closely because I was adapting it to what I had on hand, but I think the thyme and oregano were a little strong, and I would have preferred more garlic and cumin.

      We both enjoyed this and it was an easy dump recipe that I made the night before serving. I used red kidney beans and great northern beans because that's what I had. I skipped the feta and topped the bowls with shredded cheddar jack. I made a quick slaw with green cabbage, salsa, lime juice cilantro and a pinch of salt and added that to the bowls.

      This was delicious and very quick and easy. It was very creamy and perfect for a cold winter day. Don't scrimp on the scallions or the cheese.
