      These were really tender and delicious. You could not taste or feel the zucchini in them.

  • Lemon poppy seed coffee cake [lemon poppy seed streusel, buttermilk glaze]

      I wasn't paying attention and baked in a 9 inch cake pan rather than springform. The cake rose well over the top but still baked well (just higher in center). The flavor was great with a nice amount of lemon. Pouring the glaze all over the streusel and letting it harden gave the effect of a lemon cake donut in texture. My husband found it a touch dry the next morning and buttered his cake slice.

      Delicious with good banana flavor. Buttercream is nice and chocolatey with a hint of salt to help balance. Here are some minor changes I made. I used frozen bananas, so drained off the liquid and reduced it by half. I estimate I had about two tablespoons and added that into the cake batter with no reduction in any other liquid. I read this tip from a King Arthur recipe, and it's the first time I've tried it. After frosting, I topped it with finely diced crystallized ginger in place of chopped chocolate.

      I made these without the garlic butter on top, and these were incredibly tender and delicious. The amount of herbs was perfect.
