      This is a mother’s dream come true. My veggie-averse boys fought over the last few kale leaves, and asked that I please make this one again as soon as possible. Served as a quick side to salmon and rice, delicious!

      I had some roasted golden beets in my freezer leftover from another recipe that turned out to be perfect for this salad. It was light and tasty. I wouldn’t go through the time & effort to roast beets just for this salad but if I had extra again in the future, I would definitely make this again.
