      I didn’t even have the mushrooms or the cherry tomatoes but felt this turned out great! I used extra carrot, celery and garlic. I also couldn’t find frozen soy mince but I had accidentally frozen and defrosted a block of tofu and read how, if you do it twice, the water squeezes out easily and you have instant crumbles. Worked perfectly! Even with the missing mushrooms and tomatoes, the amount of sauce was perfect for a pound of rigatoni. Topped with nutritional yeast to keep it vegan.

      Surprised how well this turned out! My tofu never got browned even after doubling the sauté time, and it broke apart so the overall look of the sauce was more like ground meat rather than “chicken” pieces. I did two bell peppers (red and yellow) instead of one, and was very generous with my spinach and cilantro, and the sauce was enough, in volume and flavor, to take on the extra veg. As usual, I used extra garlic. Since I am without an immersion blender, need to make the sauce quite a bit earlier so it can cool down before going into the blender.

      Can use any margarine spread and this still turns out. Benefits from adding a bit of mixed spice and mace/nutmeg.

      Simple recipe. May not please everyone, but I liked it! It kept well in the fridge and was good for a tangy addition to random dishes, like some veg tacos. The cabbage cooks a long time so next time I may slice by hand and not use the food processor to shred.

      Makes a ton, but not a crowd pleaser (unless your crowd is as dedicated a cabbage fan as I am.)

      Excellent! Really delicious though and very chocolatey. I was worried that the orange flavor would be too overwhelming, but it was not. Very rich, of course. Used 72% Belgian chocolate for sauce, and 63% Guittard chocolate chips.. Just as I suspected the sauce that she recommends seizes when adding the plant based milk, even when the milk is heated. One must add a lot more than 2 tablespoons to thin it out again and make it pourable. Would definitely make again! More notes attached to recipe in ebook.
