    I’m so excited to make almost all of the recipes in this book! Since it’s hard to find high-extraction flour, I did the math to approximate more easily accessible substitutes. You can sub 50% bread/AP/pastry flour + 50% whole wheat flour for the high-extraction flours, and 83% bread/AP/pastry flour + 17% whole wheat flour for the 75-extraction flours. Not perfect, but it works!
