      Absolutely perfect recipe. Store was out of fresh cassava (aka yuca) so I used frozen. That may have been a genius discovery, I just added an extra minute to instant pot cooking time. Amazing taste.

      This is sooo tasty, its a gateway drug to ?? I love it! So flavourful and savory. It's easy once you soak the beans. I used whatever mushrooms I have and some soaked dried shitake of I can't get fresh. I also use mushroom stock. The salt content doesn't seem to hurt the cooking of the beans.

      I think I added a bit too much liquid (maybe the tomatoes added too much?), but the rice itself was tasty and went well with the lentil stew!

      The recipe makes more than twice as much filling as you can use with a single recipe of empanada dough - halve it or make a double batch of dough. Also, it neglects to mention when you are to add the lentils to the filling as it cooks. I added at the same time as the 4 cups of water and it worked well.

      Delicious without the cheese and cream that it normally would have. Use nice canned tomatoes and reduced sauce cooking time.

      This recipe did not work. I tried it twice and it does not ferment. Tried with forager yogurt. I really wish it would’ve fermented as it sounds good.

      Love the cauliflower prep technique. Perfect texture and absorbs the marinade super well. First time my cauliflower doesn’t taste water logged. Definitely use tostada or fry your corn tortilla.

      So light, creamy, refreshing, and delicious! All the flavors of horchata, but with oats and dates! I had to blend in two batches since my Vitamix only fits 8 cups and not 12. I halved everything and did two batches of 6. I also blended for a bit longer than it said to get the oats fully smooth.
