    I've made several recipes from this book that have been popular with my family. The Vietnamese Pork Patty Salad has been a huge success. Smoky Beans and Greens on Toast was a surprise hit as was the Sweet Potatoes with Chorizo, Mushrooms and Lime Cream. I like that many of the recipes use the "Nextover" concept which is basically planning ahead and using items from one recipe to make another the next day. The white bean recipe is a good example of this idea. Along with the recipe for the beans, a few more recipes using the beans follow, including the one I mentioned above that my family loved. None of the recipes are too complicated to follow on a week night and there is a section of the book for weekend cooking.

    I’ve made three dishes so far this week from this cookbook and they have all been great and my kids enjoyed them. Most recipes say they serve 4 but there are 5 in my family and I’ve easily been able to adapt the recipes.

      This was quick and easy to put together, good with crackers and good over greens. I had chickpeas on hand so that’s what I used. I’d repeat it.

      This was good but not great, but then, I’ve never found a butternut squash soup that I love, so that might be just me. It’s not overly sweet, which was good.

      This was really good, nice and light. I bought an extra rotisserie chicken at the grocery store, shredded it while I was prepping veggies for the week, and it made this lunch quick and filling. I added feta and felt it benefited from that. Just a really yummy lunch with components that could be made ahead for quick assembly.

      I’ve made this quite a few times and it’s really good. Rotisserie chicken makes it quick, the kale adds the green crunch. A family favorite.

      I made this dish on a Monday night, needing something fast and tasty. Fifty minutes from start to table (fast for me, even on a work night), this recipe was indeed pretty tasty for low effort. I added ground coriander in addition to the cumin with the sautéed alliums. I threw in 6 tortillas instead of the 4 called for in the recipe, but they soaked up a lot of sauce so I added more salsa. Next time I might fry the tortillas if I'm feeling ambitious to cut down on the absorbance of sauce. I will add extra salsa and/or use some canned enchilada sauce in the future. Also would add lime juice and avocado but still really good with out it. The hubs proclaimed it a keeper.

      Served it to my ten-year-old after cross country practice and he had four helpings without saying anything except, “please may I have some more?” Quick, easy, delicious.

      Big hit at our house. The patties were delicious, the flavors fresh and interesting. I made with maifun and I think I’d try a thicker rice noodle next time. Never mind that, though, it was a great dish.
