      I don’t know what made me try this because the combination of ingredients looked like they wouldn’t go together, but I ended up liking it quite a bit.

      Smelled & sounded good but not too flavorful when eaten. Not sure how I’d tweak it for the better. Used cooked brown rice & 1 qt chicken stock & no water.

      This seems to be a riff on the popular Zucchini Butter recipe. However, this is NOT an improvement. I had to add a lot of time to cook it down. I also doubled the salt and garlic. It was STILL not a keeper. Just make the Smitten Kitchen recipe.

  • One-pan parsley chicken and potatoes

      I’ve tried this a couple of times and wasn’t able to get the potatoes and chicken to finish cooking at the same time (the first time the potatoes were undercooked, and the second time they were so done they fell apart) but the flavor profile is pretty tasty so I may try again.
