Notes about Recipes in this book

  • Provini pasta

    • emilycaj on November 25, 2025

Make this recipe as written but use only 8oz of pasta-- keep the other ingredient amounts the same! Otherwise there'd be way too much pasta. I almost didn't make this recipe as it sounded too simple to be good, but I had all the ingredients on hand, and I'm glad I tried it. It's so cozy and delicious!

  • Tortellini en brodo

    • SKindel on January 03, 2025

Easy and simple tortellini soup. Added more lemon juice & used spinach instead of chard because that's what I had. This could be more substantial with the addition of rotisserie chicken or maybe some sausage but as this is a quick filling soup.

  • Spicy sloppy Joes

    • vikingcook on February 29, 2024

      Good! Followed recipe exactly.

  • Good money flounder

  • Skillet harissa beef and cabbage

    • vikingcook on April 27, 2026

Delicious! So easy! Harissa can be quite spicy so use mild if you choose. I like Mustapha’s Moroccan Hot Sauce.

  • Shortcut salmon burgers

    • vikingcook on February 29, 2024

Good! Canned salmon is a great economical protein.

  • Kimchi-cabbage cakes

    • vikingcook on April 27, 2026

I would use less cabbage & more kimchi if making again. It does need the sriracha mayo.

  • Chicken enchilada casserole

    • Churchim808 on April 04, 2025

Super fast recipe. I bought precooked chicken and then shredded it using my mixer. Assembly is in layers so you don't have to fuss with rolling the enchiladas. This will make some great leftovers.

  • Apple-cheddar Dutch baby

    • KCKB on December 28, 2023

This was tasty and, as promised, easy. Next time we make it, we want to try jazzing it up with a sautéed onion.

    • KCKB on March 14, 2026

Following up to my previous note: I now add a thinly sliced onion to the melted butter a few minutes before adding the apples when I make this recipe. It adds a nice savory flavor.

  • Tahini-coconut noodles

    • emilycaj on April 14, 2026

I hated these and threw them out. They were extremely bland... the only flavor was the coconut milk.

  • Sesame-maple tofu bake

    • vikingcook on April 27, 2026

Good, but make more sauce for table use

  • Lemony cod and potatoes

    • KCKB on February 25, 2024

Made this for the first time - found it a bit bland, but I want to give it another chance and be more generous with the seasoning before deciding how I feel about it.

  • Baked chicken with artichokes and feta

    • kshell on March 24, 2026

I have made this numerous times when we have house guests and I need an easy, elegant dinner. There is almost no clean up if you use feta crumbles but I do prefer to buy the better quality stuff and cube it myself.

  • Layered ravioli bake

    • vikingcook on April 27, 2026

Good idea but not enough sauce. I’d leave off the breadcrumbs and put the mozzarella between the layers. Maybe more on top.

  • Za'atar roast chicken

    • vikingcook on February 29, 2024

This is so good and easy! I used bone in thighs. I love tray bakes.

  • Instant Pot "pae-sotto"

    • vikingcook on April 27, 2026

If not using Spanish chorizo make sure to use a flavorful sausage.

    • vikingcook on April 27, 2026

Be sure to use a flavorful sausage if not using Spanish chorizo

  • Instant Pot split-pea coconut soup

  • Instant Pot meatballs in marinara

  • Peels-on cumin-roasted carrots

    • deanna_b8xvn7 on May 20, 2026

This is been my favorite one to make for any holiday party. I am DF and I have many people in my life that are GF so it makes a side dish that’s healthy and low in allergies
