      Make this recipe as written but use only 8oz of pasta-- keep the other ingredient amounts the same! Otherwise there'd be way too much pasta. I almost didn't make this recipe as it sounded too simple to be good, but I had all the ingredients on hand, and I'm glad I tried it. It's so cozy and delicious!

      Easy and simple tortellini soup. Added more lemon juice & used spinach instead of chard because that's what I had. This could be more substantial with the addition of rotisserie chicken or maybe some sausage but as this is a quick filling soup.

      Delicious! So easy! Harissa can be quite spicy so use mild if you choose. I like Mustapha’s Moroccan Hot Sauce.

      Super fast recipe. I bought precooked chicken and then shredded it using my mixer. Assembly is in layers so you don't have to fuss with rolling the enchiladas. This will make some great leftovers.

      Following up to my previous note: I now add a thinly sliced onion to the melted butter a few minutes before adding the apples when I make this recipe. It adds a nice savory flavor.

      I have made this numerous times when we have house guests and I need an easy, elegant dinner. There is almost no clean up if you use feta crumbles but I do prefer to buy the better quality stuff and cube it myself.
