      These were really easy, and really tasty. Family member has decided to go fully vegan.. these fitted the bill perfectly. Made the book's tabbouleh and hummus to go with the falafel.. all able to be prepped ahead - great for BBQs.

      Haven't eaten a pesto in years that was as light as this one.. and that's with omitting the sun-dried tomatoes and ricotta... would definitely make again.

      Recipe suggests 15 minutes marinating - I gave it 3 hours. Very tasty, next time I'll turn the marinade into an accompanying sauce..

      Subbed freekeh as I was "using up" pantry items. A nice version of the salad, great with the falafel. Easy, make ahead recipe.
