  • Venison chili

      I made approximately 1/3 recipe using 1 lb venison. Added a diced zucchini with the (small) poblano and onion. Used fire-roasted diced tomatoes with green chiles. Removed most of the chipotle seeds. Simmered for an hour on the stove instead of using a slow cooker (and I don't think 2 hrs would be enough in a slow cooker). We enjoyed it.

      I was a little nervous with that many ingredients, but it was damn good. Next time, cut back a little on the lemon juice and zest.
