• Black bean soup

    Great hearty soup for a cold winter night! I had a Honey Baked Ham ham bone and a package of Bob's Red Mill Black and White dried beans to use up and this recipe caught my eye as something a bit different than the usual bean soup. Except for subbing a can of chopped tomatoes for the tomato puree and adding a couple of chopped potatoes as suggested in another recipe I followed it exactly. We loved the flavor of the finished soup even though I forgot to serve it with the extra toppings the first night. It tasted even better the second night with a squeeze of lime juice and a dollop of sour cream. It took about 2 hours on the stove without pre-soaking the beans.

    Delicious meal with plenty to keep in the freezer. Divide ingredients between 2 large pots. Bake meatballs at 400 degrees for 20-25 minutes. Prefer sausages thickly sliced on diagonal instead of 3" links. Long cook time but worth it.

• Potatoes au gratin

    This dish is comfort food with a capital C. I made this for a side dish with Easter ham and it was decadently delicious. I used 2/3 heavy cream and 1/3 2% milk and it was just right, creamy and luscious without becoming too rich. I also used a mixture of sharp cheddar and gruyere cheeses for the topping. I had leftover toasted panko crumbs that had been mixed with fresh thyme and Dijon mustard before toasting so I sprinkled these on top during the last half of the bake time and they added a nice flavorful crunch.
