Notes about Recipes in this book

  • Risotto Milanese

    • Shewi128 on January 16, 2026

Maybe my mistake was just making this without anything else other than roasted broccoli, but this was just meh, even using saffron and high quality Parmesan.

  • Pickle-brined fried chicken sandwiches

    • Logan92995 on March 26, 2023

Very delicious. There was a lot of prep time (approx. 9 hours to marinade), but the pay-off was well worth it. The pickle brine marinade adds a really nice flavor to the chicken, which is complimented by the Dill-Mayo topping. It was a tad salty, but that didn't detract from the flavor at all.

  • Chicken cheesesteaks

    • Shewi128 on October 13, 2023

My husband took one bite and declared, "Now THIS tastes like a chicken cheesesteak!" It actually tasted quite good from the pickled peppers in the mayo sauce. I would lightly toast the bread before putting in the oven, but other than that, I wouldn't change it. I also did provolone and mozzarella instead of American cheese.

  • Braised chicken and lentils

    • Shewi128 on May 03, 2023

I saw favorable reviews of this recipe from other ATK users, so I sought out the special French lentils just for this recipe. Of note, my stovetop tends to cook hot, and so I burned the skin. Despite that error, it was a very good recipe. The lentils end up retaining their shape, which is a really nice texture. The flavor was much more complex than expected, likely from the smoked paprika. It tasted like it had sausage in it, and my husband couldn't figure it out either. We all really enjoyed it, and we all finished our servings. One thing I didn't like was the cilantro. I normally love fresh cilantro, but it didn't quite fit my preferences for this recipe.

  • Mini chocoflanes

    • sarahawker on February 15, 2023

My husband made this for our Valentines dinner. Really gorgeous and luscious dessert. We did have to let it cook about 15 min. longer which may be the fault of our oven.

Cook's Country showcases "country cooking": simple, great-tasting homemade food--Sunday dinners, potluck suppers, backyard barbecues, and even kids' birthday parties. And you can be sure that Cook's Country's recipes will come out right the first time, and every time, you go in the kitchen. We've taken the obsessive recipe development techniques that we've polished through years at America's Test Kitchen (which involve testing and tweaking recipes as many as 100 times until we are certain that anyone who follows them will meet with success) and brought them to Cook's Country. Cook's Country's mission is to reclaim, revive, and restore classic American heirloom recipes.
