      I used peanut oil in place of the butter and canola, and chicken breasts. Came out wonderfully.

      This was a great stew. I had jalapeño chiles in this house so used those and they were very hot so I used about ½ the amount of fresh chile. I also doubled the carrots. It was a fantastic dish. Highly recommended will make again. The peri peri and the cayenne I thought would be too much but they were perfect.
