Notes about Recipes in this book

  • Lamb, anchovy and rosemary ragù with paccheri

    • Ro_ on October 29, 2024

The flavours on this were lovely, the blitzed herbs, anchovies and sofritto really packed a punch. However, I only used two litres of water instead of three (I literally couldn't fit any more in my saucepan) and I still ended up with quite a watery sauce that needed an awful lot more reducing than suggested. I suspect that part of this is because I used a less fatty/gelatinous cut than the neck suggested, so it didn't thicken the sauce as much. The other thing that I found odd was adding the tomato right before serving so it didn't really cook at all - it was fine, but on balance I think I'd prefer a richer tomato sauce.

  • Jacket potatoes with creamy white beans, beetroot and dill

    • Ro_ on November 09, 2024

This was a typical "nice but not amazing" recipe. I'd make it again if I had the ingredients to hand, but raw beetroot is hard to come by where I live.

  • Sardine and chilli oil noodles with smacked cucumber

    • Ro_ on October 14, 2024

For a quick recipe that can be made using mostly store cupboard ingredients, this was pretty good. I used maybe too much chilli oil, even though less than recipe stated, for my partner's taste, and he also wanted more noodles.

  • Apricot-glazed chicken with cauliflower couscous

    • Ro_ on August 27, 2024

Nice for a change on a fast day, but it was too dry overall, and the chicken was a bit too sweet for my liking. Would make the cauliflower-crispy-cabbage-garlic part again though, but with something that has a sauce.

  • Miso-crusted pork with purple sprouting broccoli

    • Ro_ on November 27, 2024

I really liked this kind of "one pan" dinner, the miso pork and the roasted brocolli were a lovely combination, and great with the dressing. I probably wouldn't bother with the breadcrumbing next time, as the breadcrumbs came out soggy and not crispy (not really sure why, but anyway the dish doesn't need them IMO).
