    Spicy bean burger with the caramelized cabbage and so much more than a burger sauce was delicious. Best vegan burger so far and it stays together. I never had Kitchari before so I cannot compare. I really enjoyed this for lunches. The yogurt and cilantro-mint chutney were essential. I added fresh mint to the chutney instead of English mint sauce which was optional. I don't understand how you can call it cilantro-mint sauce without the mint. Looking forward to trying more recipes in this book.

      I made this when I was ill, as recommended in the book. It was nice and gentle and honestly a pretty good sick food. That being said, I would never cook or serve this normally - it's very bland, even with the chutney and yoghurt; and the only way I can describe the texture is slop-like. It's definitely gentle and nourishing, with the veg, beans and quinoa (if you go for that version) when you're unwell, but not something I'll be eating outside of sick days.

      I think I would use a different milk over the coconut. Maybe soy. The coconut milk makes a good texture, but made it too sweet and gave a coconut flavor to the soup.

  • Cilantro-mint chutney

      The flavour didn't seem quite right for this. I didn't use the mint sauce (the book said it was optional and could be replaced with lemon juice, so I did) so I wonder if that contributed to the sauce tasting a bit flat. I went for the date option, but if I were to make this again I would try with sugar, maybe that would help balance the flavour more? I also needed roughly double the amount of water written in order to get the chutney to a smooth consistency like it appears in the book.

      Unfortunately a flop. This was sickly sweet and the batter stayed very gooey and didn’t rise much. We still ate it but I wouldn’t make it again.
