    Made this into cupcakes and they were delicious! Used a maple cream cheese frosting found on smitten kitchen to frost them.

    I substituted the pumpkin puree for the same volume of mashed ripe bananas. Turned out wonderfully in a bundt pan, a new favorite cake. The spice blend and taste level was spot on.

    DH pronounced this spectacular. Used Bosc pears. The cake crumb was not as dense as many gingerbread cakes and that made a lovely touch. Swapped cardamom for ginger because I super love cardamom and they have a related flavor profile -- a great swap if you love cardamom.

    These were great! Had a perfect balanced flavor. The dough was a bit wet for me, even after very thorough overnight chilling, but turned out just fine once flour was added for rolling.
