      I used chorizo, zucchini, green bell pepper, red bell pepper, yellow onion, tater tots, eggs, and Mexican cheese blend. These are super filling and really good, but took a while to make. They reheat well in an air fryer (around 350F for around 17 minutes, flipping halfway, but still working on ideal reheat numbers).

      Very easy to make. The hardest part was getting all of the water out of the spinach. I did end up adding garlic paste before mixing all together.

      This was a very good battered fish recipe. The batter was light and flavorful. I think the slaw needs more acid, but altogether it makes a lovely dinner.

      We loved this bread! The coconut flavor is moderately strong, and to my palate the extract didn’t produce an off flavor. Next time might try toasting the coconut first, as suggested in the variation. It had a great texture despite both slightly overcooking the exterior and undercooking the interior (I had just baked something at a higher temp, and didn’t wait long enough for the oven to get to correct temperature). Instead of making a ganache I added the chocolate chips to the batter and skipped adding extra nuts and coconut for topping. Will definitely make again!
