  • Toffee poached apple muffins with salted almond crumble

      These muffins are good but, if you are starting from scratch, they are a lot of work. You make the toffee poached apples recipe and the crumble before making the muffins. Both of these make a much larger quantity that needed for the muffin recipe. The apples are nice, but I’m not sure it is worth the effort if you are making them just for this muffin recipe.

      Delicious ginger cookies! They had perfectly crisp edges and chewy centers with small bits of candied ginger. I used a small cookie scoop and got 46 large cookies. Twenty-four cookies, as the recipe stated, would have been huge. I prefer the smaller size. I also think I would reduce the sugar next time...maybe a bit too sweet for me.

      I used ancho chile powder for the chili powder, and I used the full 1/2 tsp of ground cayenne pepper. These were great spiced chocolate cookies that had a Mexican hot chocolate vibe. The spice level was perfect. I would make these again.

      SO delicious. Great texture, likely due to the inclusion of some whole wheat flour. Crispy around the edges, but the interior is tender. Although the stated yield is 12, I made 20 cookies using a smaller cookie cutter than specified and I think they are a good size. See picture. I used seedless raspberry jam, and it was delicious on these cookies.
