Notes about Recipes in this book

  • Spinach salad with almond-crusted goat cheese medallions

    • EmilyR on March 26, 2024

While living in Germany we could buy these amazing little goat cheeses at the grocery and they are perfect for salads. I haven't had them in such a long time, so it was a delight to make them even if it's one of those rare things I would have preferred to just buy at the grocery. I will make it again.

  • Oat granola with pecans

    • EmilyR on March 26, 2024

This is a straightforward oat granola with pecans... my husband has eaten a substantial amount since I made it.

  • Coconut-chia seed pudding

    • EmilyR on March 26, 2024

While this isn't new or revolutionary, it's simple and outside of waiting time it comes together with no effort.

  • Brazilian cheese bread (Pão de queijo)

    • EmilyR on March 26, 2024

I have always wanted to try these and it just so happens making them myself from scratch was the way to do so. They certainly are best straight from the oven. I am also glad to have frozen half of the batch as they are filling. I haven't baked up the frozen ones to see how they are as of yet. These don't quite replace bread for me.

  • Seed crackers

    • EmilyR on March 26, 2024

These are so similar to the Norwegian crisp bread crackers at Trader Joe's. I was delighted to find this recipe and made a double batch on the spot. These are the perfect pairing with cheese and a salad, though rather addictive for snacking.

  • Dad's honey-mustard dressing

    • EmilyR on March 26, 2024

Made for the goat cheese spinach salad. Great and simple. If you make salad dressings you probably have something similar in your arsenal.

  • Baru nut bars

    • EmilyR on March 26, 2024

One of my favorite recipes from this book. Seriously simple and delicious. Really these are great for anyone with a sweet tooth and baru nuts are something special.

  • Avocado-lime mousse

    • EmilyR on March 26, 2024

These remind me slightly of a very lime forward dessert - almost like a magarita cocktail meets a sweet treat, but they are very good and the entire family enjoyed them.

  • Avocado-chocolate mousse

    • EmilyR on March 26, 2024

I didn't have a big preference regarding this or the lime version as they were both unique and delicious. I'd happily serve this and listen to the responses as to what the ingredients are thought to be.

  • Oatmeal golden milk cookies

    • EmilyR on March 26, 2024

I love the idea of these, but mine had an almost chalky aftertaste that left me a bit puzzled. I used the arrow root powder. I also made my own blend of golden milk spices as I didn't want to buy an overpriced spice mix when I could do that myself. These have a sticky quality that I'm not accustomed to, probably because I usually have 'real' cookies with reckless abandon.
