  • Cauliflower and salmon traybake with tahini sauce

      The combination of cauliflower and salmon seemed strange to me but we loved this dish. Cutting the cauliflower into wedges before roasting resulted in crisp and tender pieces. I always love tahini sauce. I didn’t have the herbs and skipped the pomegranate so this was not a colorful dish but easy and flavorful.

      A great combination, especially the lemony dressing. I used tinned lentils and subbed parsley for basil that’s hard to come by in the middle of winter. The celery and red onion bring the promised crunch along with the toasted almonds.

  • Middle Eastern cauliflower rice with lamb mince

      This like a keto version of Lebanese nut rice and while rice will always be my favourite, this is just as flavourful and much lighter. It’s worth making the fried onions, but I probably wouldn’t bother with the mint unless I had some on hand.
