Syrniki. These were not a success. Didn't hold together and were very hard to flip. Other recipes include flour in the cheese mixture. This recipe doesn't..

Easy mushroom spread: definitely issues with the writing of the recipe as certain steps took way less time than the recipe indicated but it was very easy as advertised. We would give it 3.5/5 for taste, 4/5 when we factor in the ease of the recipe

Quick palyanytsya bread. Developed when there was a shortage of yeast at the beginning of the full invasion. Uses baking soda. More like a soda bread but quick to make if you need one in a hurry.

Nalysnyky(crepes with creamy farmer cheese filling) I have made many nalsnyky but not as light as these. The batter is very thin so I let it rest for 30 minutes to develop the gluten. Filling had just right amount of sweetness. They were so wonderfully light. Served with roasted apples and maple syrup.

Notes about Recipes in this book

  • Traditional rye bread

    • stef on April 07, 2026

A lovely soft loaf of bread which is quick to make. Not a big loaf will double recipe next time.

  • Fried potatoes with goat cheese and garlic

    • lkgrover on January 16, 2025

Easy potato recipe; good for breakfast or as a side dish. I used feta cheese.

  • Vegetarian borsch with Carpathian plum butter (Lekvar)

    • stef on March 05, 2025

Followed recipe but instead of lekvar added juice of 1 lemon and 2 tablespoons sugar. This gives it a sweet and sour taste. At serving time to each bowl about 2 tablespoons of heavy cream added and topped with chopped dill. So good. Borscht has been designated by UNESCO as of ukrainian origin.

  • Roast duck with banosh

    • lkgrover on January 04, 2025

Good roast duck with banosh stuffing. The banosh is a cornmeal stuffing with lots of added vegetables. I had an extra 2-3 servings of banosh, which I baked for 30 minutes in the oven after the duck was finished.
