    This volume organizes cheeses by geographic regions, often countries. Within the region, it arranges cheeses in alphabetical order giving some history/description and origin, type, taste, appearance, and availability. This book was a quite satisfactory starting point in 1981. However, the availability of cheeses, especially local artisan cheeses, has grown significantly. This is now more interesting as culinary history.
