Notes about Recipes in this book

  • Caramelized shallot dressing

    • tarae1204 on June 16, 2025

I did not have six shallots so used one shallot and one large yellow onion, and it was fine. The baking soda has a chemical effect first turning everything turmeric yellow then appearing to liquify the onions. They taste good in the end. I added a half teaspoon Dijon to this dressing to increase the acid level and flavor depth.

  • Fancy dipping oil that no one can resist

    • jordan_pp6tz9 on February 02, 2026

I made this and felt the volume of herbs was a bit overpowering. I wasn’t sure if the herbs were supposed to be pre dried (I.e., spices) or fresh herbs, chopped. It would probably be better with fresh herbs.

  • My go-to zesty Italian dressing

    • ellencooks on August 25, 2025

Loved this on the chickpea Italian wraps and on salad.

    • redbird on February 15, 2026

      Great all-purpose vinaigrette.

  • Whipped cottage cheese protein pancakes

    • jordan_pp6tz9 on February 02, 2026

I made these and the texture was a bit off. The recipe notes they should be fluffy but they were a bit thinner (like in the cookbook photo). I would probably not try to remake.

  • Crispy baked breakfast quesadillas with pico de gallo

    • jordan_pp6tz9 on February 02, 2026

This was pretty good! I think if I made again I would probably add a few more eggs to the recipe.

  • Peanut butter chocolate oatmeal cups

    • jordan_pp6tz9 on February 02, 2026

I made the recipe and had several family members taste test it - it was pretty bland! The amount of milk added also seemed like a lot and the muffins were sort of falling apart.

  • Banana zucchini muffins

    • julesamomof2 on June 02, 2025

Family loved these, while I thought they were way too sweet. I liked the addition of zucchini to keep them moist.

  • Chai chia pudding

    • hbakke on April 23, 2026

I ground my own spices and they were a bit too potent for this recipe. Spice overload. I would try this again with pre-ground spices.

  • White bean tuna orzo

    • lauren424 on July 24, 2025

Made this for my lunches this week. Not bad, a little dry. I would make a little extra dressing next time.

  • Cherry jalapeño chicken salad

    • ellencooks on August 25, 2025

This has become a repeated favorite. Really nice balance of flavors.

  • Fire roasted lentil lunch soup

    • jordan_pp6tz9 on February 02, 2026

We have made this several times and it’s SO good!!

  • Italian chopped [salad wrap]

    • ellencooks on August 25, 2025

Love this with or without the salami.

  • Cilantro lime grilled chicken bowl

    • megbgraham on May 25, 2025

I liked this recipe! Love the marinade, very easy. Made it with grilled corn.

  • Lemon spaghetti with roasted chickpeas

    • jordan_pp6tz9 on February 02, 2026

This was great! Simple but flavorful

  • Hot honey apricot chicken with pan-toasted broccoli

    • lauren424 on August 05, 2025

This was so delicious! The apricot sauce is so good, I want to eat it on everything. I broiled the chicken the first time but it took awhile, so the second time I grilled it and it was amazing.

  • Roasted chicken & potatoes with piccata vinaigrette

    • lauren424 on April 29, 2025

This was good! Next time I will use chicken thighs with skin so the chicken gets really crispy on top.

    • julesamomof2 on June 02, 2025

As I began prep for this recipe, it became clear to me there is an error here and bone-in, skin-on thighs was the intended protein for this dish. 60-75 minutes in the oven for boneless, skinless chicken thighs would be way too long, plus the picture depicts skin on chicken. I had to make many tweaks to make this work, and in the end everyone liked it but I obviously won't be following this recipe again.

  • Smashburger salad

    • tarae1204 on June 16, 2025

Very tasty and weeknight friendly. This recipe handles substitutions well - I used romaine instead of iceberg, cornichons instead of pickles, Roma instead of cherry tomatoes, mild instead of sharp cheddar. You can prep everything while making the caramelized shallot dressing.

  • Sticky BBQ meatballs with herbed smashed potatoes

    • megbgraham on May 06, 2025

Easy and tasty. Kids loved it! I loved the smashed potatoes, kind of a middle ground between how I usually do smashed potatoes and mashed potatoes.

    • julesamomof2 on May 28, 2025

This was pretty heavy for a weeknight meal, I found myself wondering how I could lighten it up. There was an error in the recipe which calls for boiling whole, unpeeled potatoes. I only realized the error when I read the sidebar note for make ahead which mentioned holding sliced potatoes covered in water for a few hours. No mention of slicing the potatoes. Whole potatoes took 45 minutes to cook, not the 15 minutes per the recipe. Not off to a good start with this book.

    • jordan_pp6tz9 on February 02, 2026

This one was just ok. The end result did not taste very appetizing but it could have been user error!

  • Black bean turkey chili with green chile cornbread muffins

    • megbgraham on May 25, 2025

Next time I’ll cut back on the heat for my kids. But I loved the cornbread muffins!

    • jordan_pp6tz9 on February 02, 2026

This one was very good! Everyone loved it

  • Crispy chicken with broccoli slaw

    • megbgraham on May 06, 2025

Chicken was good, but the star of the dish was the slaw. The dressing was perfection! Loved the sunflower seeds in there for some crunch. Great option for a low carb dinner that still fills you up.

  • Flank steak with garlicky sautéed kale

    • megbgraham on May 25, 2025

Absolutely LOVED the kale in this recipe. Next time I’ll triple the recipe for the kale, as it shrunk down and didn’t make a lot. That was the highlight of the dish for me. Steak was good but nothing super memorable.

  • Chicken tortellini soup with fire roasted tomatoes

    • holly_6rdxil on April 24, 2026

Made it in the crockpot and it worked great! I added the tortellini in last. I also subbed kale for spinach. This was even better leftover.

  • Weeknight white pizza

    • jordan_pp6tz9 on February 02, 2026

This one did not turn out well for us. The puff pastry didn’t cook through with the ingredients on top. Could have been user error!

  • Sour cream peach cobbler

    • ellencooks on August 25, 2025

      This was good! And easy!
