Notes about Recipes in this book

  • Allison's Danish snowball cookies

    • London_Mummy on December 23, 2025

These biscuits melt in your mouth and the recipe is straightforward.

  • Monica's almond butter and banana muffins

    • London_Mummy on January 25, 2026

These little muffins have come out fine. With this book, I always wonder if all the fussy little details & ingredients were actually worth it, eg I had to make my own almond butter to add 75 g & I'm still wondering if I could have just added some ground almonds instead.

  • Black currant, lavender, and mascarpone cakes

    • London_Mummy on April 10, 2026

This book contains delicious cakes but always makes things unnecessarily complicated. Eg I was told to grease then flour the muffin tin. The batter is sticky & also contains lumps of blackcurrant jam. Surprise, surprise, the cakes are stuck now! I wish I had just used commonsense & used my silicone cupcake liners. I was making these cakes for guests so it is a good job I also made some cookies, which look OK.

  • Jess's banoffee birthday cake

    • London_Mummy on October 10, 2025

This is lovely but massive birthday cake. We had to freeze some of it, cut into slices, each wrapped in parchment & foil. It froze so well that a friend to whom I served a defrosted slice demanded the recipe.

  • Blood orange and polenta loaf

    • London_Mummy on January 14, 2026

This recipe took an unexpected turn which made it much more interesting. It was on my "I want to cook this" list for a while, since I am using up a large quantity of polenta. Today, I suddenly decided to make it with two pink grapefruits & three limes which I had. It has come out with a unique, marmalady, bittersweet taste which I really enjoyed. I had about twice the volume of juice specified, made it all into syrup & used all the syrup on the cake. I substituted a mix of vegan baking block & Trex for butter, in order to reduce the saturated fat. I'll eat some for breakfast too.

Publishers Text

Rising Hope is the cookbook from Luminary Bakery, a social enterprise founded to support disadvantaged women, including those who have been homeless, in prison, or experience violence, by teaching them how to bake. Combining delicious recipes with stories from the bakery, and the women Luminary has empowered, Rising Hope will take the reader on a journey that shows how anyone, anywhere, can learn how to bake, grow as an individual, and share these experiences with those around them.
