      Prepped this for breakfast this week to eat with fresh berries and some vanilla Forager yogurt - so yummy and surprisingly still nutritious!

  • Greek-inspired salad with tofu 'feta'

      This was a reasonably tasty and quick meal. I liked dressing and marinade a lot, and the crunchy seeds were a great addition. The tofu "feta" was good, but not great, and it's not really feta-equivalent in any way. More of its own thing, which is fine, but calling it feta sets one up for a little disappointment. (You might feel differently if you are vegan, and this is as close as you'll get). Next time, I will cut the tofu smaller and marinate overnight to give it a bit more flavor.

      Delicious! Husband said we needed to double the recipe next time. Follow steps with a couple adjustments- turned down heat to med-low for cooking sweet potato + added splashes of stock a few times over. Otherwise this would have badly burned. Used blender to finish soup off rather than a food processor. Crisped chickpeas in air fryer. 20 min @ 400f + 1:30 broil. Nice and crisp!

      So yummy!! Added a tiny bit of lemon juice at the end and topped with parsley, vegan parm, and shiitake bacon. So good!

      a pretty basic roasting of vegetables and tofu. However the sauce…was weird. I wasn’t sure what it was trying to be, and it was weirdly sweet? My mouth did not like it. Will not repeat.

      The sauce was quite sweet and required a lot of salt to even out, but was better than expected on the actual veg and rice.

      recipe photo shows a pile of chickpeas, but chickpeas are not listed in ingredients? I threw them in anyway. Not sure how anyone is going to get 34g of protein through this meal, even with the chickpea addition (plus quinoa side). I had a giant portion and i still didn’t make it there. Regardless, the flavors are very good! Don’t skip the squeeze of lemon juice!

      perfect, cozy comfort dish! I’ve made this a couple times now. Followed instructions pretty much as written and everything turned out great! Topped with, “Easy Parmesan-style cheese”

  • Sneaky protein coffee and chocolate mousse

      A pretty standard version of the classic tofu chocolate mousse. Like most tofu mousses, this has a great texture, but you can definitely taste the tofu. Not a bad thing (if you like tofu), but there is a fairly distinct beany note that might be off putting for some or those expecting a more classic mousse.

      This was delicious. Used 81% chocolate, topped with fresh cherries & cacao nibs. Made 4 small portions as very rich.
