    22 May 2011 Fingerling Potato, Smoked Salmon, & Dill Salad I'm working on a theme of adding salad greens to a dish to make it bigger and healthier. Here I added arugula and Boston lettuce, to turn it from a potato salad into a salad salad with potatoes. Only a crazy person would eat smoked salmon in Seattle in May, so I substituted fresh salmon for the smoked, but I thought the smoky flavor was a good idea, so I added it back in with some Mexican smoked salt. I cooked the potatoes in broth rather than plain water. I boiled the potatoes in a tiny pan while cutting the salmon with scissors into bits, fished out the potatoes when they were done, boiled the salmon bits, fished them out, and reduced the starchy, fishy broth to add to the dressing. Very, very good, literally took only 15 minutes.
