    Indian rice with lentils and mushrooms p. 176. This is basically a form of dirty rice, and is predictably good; we enjoyed it with some veggie sausages. I did switch a few things; I soaked my rice overnight and also soaked the lentils for about 30 min in salted water. I used oil for sautéing the onions, then removed those from the pan and sautéed mushrooms and garlic. I also substituted Kashmiri masala for the curry powder and had to omit the parsley. I used my own chicken stock but this would be easy to make vegan by using veg stock or water. I made a half recipe and this made enough for at least 4 generous servings. Good way to cook just a few lentils into a larger dish (I love lentils but can’t eat a lot of them at a time). Will repeat.

    Thai cucumber salad: page 81. A simple salad that I make often in cucumber season. Goes well with salmon, quiche, or BBQ meats. I sometimes add finely chopped red pepper.
