      This is one of my all time favourite salads. It comes together quickly and uses store cupboard ingredients. When green beans aren't in season I use asparagus and/or garlic scapes. I use a combination of yogurt and mayo to replace the cottage cheese mixture.

      I've been making this simple stir fry for years and it's one of our favourites. I've developed many variations; always add more ginger and sometimes sub red Thai chili paste for the bottled chili.

  • Barley, green pepper and tomato casserole

      This was a very tasty simple dish. I used chicken stock and pre cooked the barley on the stovetop before baking in the oven. As a result, my bake time was reduced. I also reduced the amount of cheese. This made a nice addition to a mostly meatless meal. Will def repeat.

      A simple and tasty one pot meal. I usually use beans cooked from dry rather than canned, just personal preference.

  • Skillet greens with ginger and celery

      Quite delicious and extremely easy to make! Made this as written, just added a scant half teaspoon of fine salt. I used cider vinegar (can use rice or white vinegar according to the recipe) and my kale was frozen from the garden. A great way to use celery that may be languishing in the fridge. I served with soy sauce on the side as we were prepared for this to be bland, but it wasn’t, and nobody added soy. Served with a rice noodle/ chili crisp dish for a vegan meal. The brightness of the ginger really came through. Will def repeat.

  • Apple=raisin muffins

      Another really nice muffin from this book. My applesauce was sweetened so I reduced the sugar to 2 tbsp and that worked well. I used bran from the Arva flour mill in Canada which tends to be finer than store bought bran and also omitted the orange zest. Baked at 400 fan for 20 minutes.

      Very good muffins. I used cinnamon, ginger, and nutmeg as the spices, and omitted the raisins.

  • Microwave oatmeal squares

      These are super easy squares. I use half a recipe to make just a few squares at a time. I sub butter for the margarine. They are sweet and most kids love them.
