    Courgette Curry P93 in "Easy Indian", but does not appear in the linked book "Easy Everyday Indian". I used Courgette Curry as a base recipe for a curry with zucchini, eggplant and green peppers. It was delicious. I didn't use the coconut milk, used some water and extra spicing instead to create a delicious gravy. This is a great little book and I enjoy it a lot.

    This book has delicious looking recipes but the 3 I have tried so far have been so badly tested and are ridiculously disappointing. Watery dahl, (had to be reduced for an hour), rice like porridge, watery and tasteless chicken curry. Sloppy instructions.

      P76 in the linked book "Easy Indian". This is a reasonably quick and very simple dish that is delicious with a dal and pachadi. I cooked lemon rice and cucumber pachadi with it. A good, easy mid week lunch at home (but perhaps not as good as some other eggplant recipes)

      P104 in the linked book "Easy Indian". Excellent! This is such an easy dal yet packs more flavour than it seems from the recipe. I cooked it in the Instant Pot pressure cooker (1m HP; FNR). Best on the day it is made.
