      We made this with yellow beets and we could not get fresh curry leaves so we used about double the amount of organic dried curry leaves and it worked really well. Used dried coconut about half the amount of the fresh and rehydrated the dried coconut by steaming it. Worked well in the finished dish the coconut was still a little crunchy which worked very well. Really great delicious dish. A keeper.

      We made this again for New Years with fresh curry leaves and the dish was even more delicious. We bought the fresh curry leaves at an Indian store and we are freezing the rest. Highly recommended.
