      I have made this soup so many times because it is so delicious. I make my stock in the pressure cooker the day before. Everyone asks for the recipe.

      Lovely smooth textured soup. I served it hot, but I can imagine it would be lovely chilled, perhaps for a summer dinner party. Next time I would use smaller prawns and more of them as opposed to halving large tiger prawns. My prawns were raw and I popped them in the soup at the end to cook for 3/4 mins.

      Used previously frozen gammon stock and added a tin of tomatoes. Used the stick blender to retain some texture. Easy, cheap and tasty for everyday lunches.

      Cook all mushrooms in the soup, rather than sautéing a few towards the end. Always use chicken stock as I prefer the more flavourful taste. Sometimes use milk instead of cream…

      Comfort food for a snowy Sunday evening. Only 6 ingredients and easy to prepare. As we prefer a chunky chowder, I didn't blend the soup and added all the veg at the beginning. Possibly even better than our usual GH smoked haddock chowder.

      This is very tasty BUT due to the puy lentils is sludge coloured! Not attractive but good. I didn't make the garnish but imagine it would make the finished article slightly more appealing to the eye. A couple of tbsp cream or milk would also lighten the colour.

      Fresh coriander essential. Check seasoning as more spices may be needed to lift flavour.

      I had a bag of frozen parsnips left over and this recipe was a great use for them. The method of roasting the parsnips with Parmesan made the most delicious roast parsnips ever and I almost ate them all there and then! But hubby loves soup so I carried on and it was really delicious. The method was a bit involved but I will make it again. The supermarket was out of double cream so I used Greek yoghurt thinned with an equal amount of milk. This worked but I’m not sure it actually needed the extra creaminess.

      I’ve now made this quite a few times and in fact I’m serving it to friends at a supper party tonight, Now I find it an easy recipe with delicious results and I don’t think it needs any cream as the Parmesan in the soup makes it creamy enough.
